Macaroni and Veg

I have affectionately renamed my newfound recipe of vegan macaroni and cheese to Macaroni and Veg because...there's no cheese! There's not even a cheese substitute! It's actually crazy to think that something that tastes sooo much like macaroni and cheese is actually made from carrots, potatoes, and cashews!

The recipe is found here. And like I said in my last post, make sure you read alll the instructions. I like to wing it and put in just a little bit of this and a little bit of that until it looks good. I hate measuring things out! But this is definitely a recipe that should be done correctly! (I found out the hard way..)

The final result is....it's really good!!!! My whole family liked it! (If you're wondering what the massive amount of crumbly stuff is, I kind of went overboard on the breadcrumbs.) This is definitely a recipe that I want to make again! 

It doesn't taste cheesy (obviously) but it has the same texture and consistency as real macaroni and cheese, so it's hard to tell the difference! I was definitely surprised by how good it tasted! I ate the leftovers for lunch today and I think I like it cold even better than hot!

I suggest making it! Winner! :)
