I've found a bunch of recipes for vegan "egg" salad. They all use chickpeas and vegan mayonaise. I'm trying not to eat processed things ('m pretty sure vegan mayo falls under this category) and I don't have 6 bucks to spend on one jar of it.
So here is my eggless, dairy-free, meatless, gluten free (if you use gf bread), soy-free recipe for the BEST SANDWICH IN THE WORLD!
1 can (15 oz) chickpeas
Drain, rinse, and peel the chickpeas. Find an easy way to peel chickpeas here.
Peel and core the avocado. Smash both with a fork. (I like to do them separately
and then mix them together after both are smashed. It's easier this way!)
Season with whatever you like. I used onion powder, garlic powder, salt, cilantro,
and a lot of pepper. Top with your choice of veggies - tomato, onion, lettuce.
Makes about 4 sandwiches.
It's seriously that easy!! And it's so good! You can't taste the chickpeas at all so if you hate beans, you won't even notice. It has the consistency of egg salad but with more of an avacado taste. If you like guacamole, you'll love this. I loved the crunch that the veggies added. My whole family ate it up. Chickpeas are so full of protein, that the one sandwich filled me up. This is something I will definitely make again. And it's so cheap??
